Sticky Date Pudding

Recipe-StickydatepuddingThe following pudding was specifically written for a male client who is gaining mass as you can get a lot of calories into a relatively small space.

Total calories/nutritional content is provided for both a full and a half serve, add a protein shake or protein source.

Ingredients:
1/2 cup oats
10 dates, 8 chopped and 2 whole to garnish
1 egg yolk
2 tablespoons maple syrup
1/4tsp Baking powder
2 tsp cinnamon
Vanilla – I used powder but you can use fresh pods or essence

Method:
Preheat the oven to 180 degrees C.

Roughly chop all the dates (except for the 2 for the garnish) and place them in 1 cup of boiling water with 1 tablespoon of the maple syrup and the cinnamon.

Leave the dates to soak for 10 minutes and to let the water cool, before blending the syrup and date mixture until smooth.

Add the oats, the baking powder and the egg yolk to the date syrup mixture and mix together well. Place in the oven for 20-25 minutes or until the top of the pudding springs back when touched.

To serve hot from the oven, simply pour the remaining maple syrup over the top of the pudding and garnish with the remaining dates.

If eating at a later time (you can make this in bulk and leave portions in the fridge for up to 3 days), remove the serving 30 minutes prior to eating and pour the remaining maple syrup over the top, leaving it to soak in before eating.
