Shredded Beef Tacos (lettuce wraps)

Shredded Beef Tacos Lettuce Wraps
Ingredients:

  • Beef: Top Round Lean – 24oz/1.5# (try grassfed)
  • Garlic – 2 tsp minced
  • Canned Fire Roasted Tomatoes – 2 cans
  • Serrano Pepper – 1 seeded and minced
  • Cilantro – 4 TBS chopped
  • 1 yellow onion sliced
  • 1 green bell pepper sliced
  • Ground Cumin – 2 tsp
  • Ground Coriander, 1 TBS
  • 2 limes in half
  • Salt/pepper to taste – please go light here
  • * Red Leaf Lettuce- 1 head trimmed (need whole leafs) these are your taco shells

Directions:

  1. Place ALL ingredients in Crockpot on high, cook for 6-7 hours
  2. Take beef out and shred, measure out to portion size
  3. Drain liquid into pan and reserve the veggies and add to the shredded beef
  4. Liquid – bring to boil and bring down to simmer until reduces by half, this is your taco sauce

** Avocado, salasa, raw onion, shredded cabbage, plain greek yogurt, jalapeno are all great toppings to add on to this recipe but your MACROS would have to be adjusted accordingly.
