Roasted Garlic Sauce

Super low calorie but very high in flavour, this sauce is perfect for meat, vegetables, salads and anything that needs a bit of garlic and zest! (So, everything.)
The recipe will last in your fridge for about 4 days.

Ingredients
2 bulbs of garlic
2 tablespoons of tahini
The juice of 2 lemons
1/4 cup of white vinegar
1/4 cup water
Salt & pepper, herbs to taste

Method
Roast the garlic in a moderately hot oven (180 or higher) for around 20 minutes.

Once done and cooled, add all ingredients to a food processor and blitz until well combined.
Add extra dried or fresh herbs as desired, I’d recommend fresh parsley and chives or dried oregano.
