Coconut Crusted Salmonby John Meadows on January 15, 2013
- 4 tablespoons of melted butter
- 1 teaspoon sea salt
- 1/8 tsp paprika
- ½ cup desiccated coconut
- 1.3 lbs of wild salmon fillet
Preparation Preheat your oven to 350. Mix the melted butter with salt, paprika, and coconut in a small bowl. Spread this over the salmon. Placed the salmon in a buttered Pyrex pan and bake for about 10 minutes, or until salmon is cooked through and crust is lightly browned. That’s it, easy and delicious!

Happy holidays all! I thought this month that I would share some of the EASY recipes I like with you. These came from a great book called Eat Fat Lose Fat by Mary Enig. Again the emphasis is on simple this time! I have been on a salmon and coconut kick lately too, in case you don’t notice!
