Caramel and Apple Granola

by on June 1, 2018

Granola tastes AMAZING.
You know why?

Because granola is traditionally made by taking oats, seeds and other grains and cooking it with a lot of sugar and a lot of oil.

This granola is different.
It’s still high in carbs as granola will always be, but it’s neither packed with sugar nor oil.

But it’s still crunchy.
And sweet.
And moreish.

And now, it’s high protein too.

Ingredients
1 cup raw rolled oats
1 cup raw oat bran
2 scoops salted caramel protein powder (vegan or WPI, both will work)
1 tablespoon peanut butter
2 tablespoons of stevia
1 small fuji, granny smith or other sweet apple, grated
Water

Method:
Preheat an oven to 200 degrees.

In a large bowl, combine all of the above ingredients with about 1/4 cup of water.
Using clean hands, mix everything through to make a very dry dough-like consistency.
Use your fist to clench the dough and then squeeze to make large clumps. Do this for about 2-3 minutes to combine everything into clusters.

Spread out on a baking tray lined with paper and bake for 30 minutes.
After about 20 minutes, shake the tray and then return to the oven to make sure the clusters bake evenly.

Turn the oven off after 30m and leave to cool completely before (EATING ALL OF IT) pouring into a clean glass jar. This will store in the cupboard for 4-5 days, if it lasts that long…

Serves 5.
