Beetroot, Pear & Goat’s Cheese Salad

The warm pear and beetroot melt the goats cheese and make a creamy “dressing,” but without adding too much fat, and the combination of textures makes this far riches than it’s calorie density implies.
Ingredients
2 large beetroot, washed and cut into 8ths
1 large pear, cut into 8ths
6-7 cups of raw, washed spinach leaves
4 tablespoons of goats cheese
4 tablespoons of walnuts
Method
Preheat your oven to around 180 degrees, and lightly oil a baking tray or use a non stick tray without oil.
Add the pear and beetroot to the tray and bake until soft, or for around 30 minutes.
To put the salad together, just mix the pear, beetroot, spinach and goats cheese in a large bowl.
Portion out into 4 serves, season with salt & pepper and then sprinkle 1 tablespoon of crushed walnuts on top of each.
