Beef & Apricot Tagine

Beef-Apricot-Tangine
Ingredients:
2 large onions, diced
500g very lean, grass fed beef mince
3 whole roma tomatoes, diced
5-6 cloves garlic, crushed
4 portions frozen spinach
2 heaped tablespoons each of harissa and tomato paste
1tsp each of coconut oil, turmeric, cumin and smoked paprika
500g fresh apricots, hulled and chopped
Himalayan sea salt, freshly cracked pepper

Directions:
Cook the onions, garlic, tomatoes and spices until they begin to sweat and give off fragrance. Add the mince beef and cook until brown before adding all other ingredients and 1 cup of water. Simmer on a slow heat for 20-30 minutes.

Tastes amazing served on rice that has just been steamed or boiled, drained and then had a handful of shredded coconut or 1-2tsp coconut oil and some Himalayan sea salt mixed through.
