Banana, Pecan and Peanut Butter Loafby Elissa Jewell on April 6, 2017
300g overripe bananas
100g rolled oats
3 serves vanilla or banana WPI
¼ cup peanut flour
Pinch of baking powder
1 teaspoon melted coconut oil
2 teaspoons cacao powder
Preheat the oven to 180 degrees.
Blend all loaf ingredients together until smooth before pouring into a silicon loaf tray.
Bake for around 25-30 minutes or until golden and springing back to the touch.
While still warm, combine the coconut oil, cacao and stevia together before pouring over the loaf.
Sprinkle with crushed pecans.
Makes 6 serves.
