Baked Chicken Tenders

This recipe is for comfort food turned high protein, lower carb and fat. If you’re craving nuggets or fried chicken, give it a try instead. The recipe is for 2 servings however you can increase / decrease the serving sizes as needed.

Ingredients
2 medium chicken breasts, cut into nugget sized pieces
1 whole egg, beaten
2 slices of any high protein, high fibre grain bread
1 tablespoon each of dried garlic, smoked paprika and mixed herbs
Seasoning to taste

Method
To make the crumb, use 2 slices of stale bread that have been processed into breadcrumbs, or bake the bread in the oven to remove some moisture before processing.

Once done, preheat your oven to 180 degrees and set up a workstation with seasoned whisked egg in one bowl, the garlic, smoked paprika and the mixed herbs in another, and the breadcrumbs in the last.

Dip the chicken pieces in the mixed herbs, then the egg, then coat with the breadcrumbs. Repeat until all pieces are coated and then lay out on a lightly greased or non stick baking tray and bake for 30 minutes or until tender.

Serve with greens and a buffalo, hot chilli or mustard sauce.
