Almond, Caramel and Banana French Toast
by Elissa Jewell on July 1, 2021This is a really quick, delicious and easy recipe that gives you half your dietary fibre and 20% of your potassium needs. The addition of a little bit of fat from the nuts and the high fibre content means it will digest much slower, which is perfect for a pre workout meal about 1-2 hours prior to training.
Halve the serving size if your calorie needs are lower.
Ingredients
2 egg whites
Granulated steiva
2 slices high fibre, lower carb bread
1 small banana
1 serve caramel WPI (although you can use any you wish)
10g crushed almonds
Method
Make the french toast by whisking the egg whites with the granulated stevia, then soaking the bread in the egg whites until all the mixture is soaked up, and frying on a hot pan until golden.
To make the topping, mix the WPI with some water to make a thick cake-like batter, slice the banana and place on top of the toast and use the crushed almonds as a garnish.
