by Elissa Jewell on November 3, 2015
Ingredients:
500g raw organic free-range beef mince
200g frozen cranberries
1 cup water
1 tin of diced tomatoes (or 8 fresh, chopped)
2 bulbs garlic, roasted
100g raw quick oats
1/4tsp each of allspice, nutmeg, smoked paprika & cinnamon
2 tablespoons maple syrup
Directions:
Heat the cranberries on a large, non-stick saucepan and cook until they begin to caramelise, add the garlic, maple syrup, water and tomatoes, season and stir well.
Begin making the meatballs by combining the mince, spices and oats in a bowl. Add ¼ cup of cold water and mix well with clean hands. The recipe will yield 8 meatballs, place each in the saucepan and continue to cook on a medium heat, turning regularly when the meat has browned.
