Coconut Avocado Dip – This is Delicious!

- 1 ripe avocado
- 3 tablespoons coconut cream
- Sea Salt and freshly ground black pepper
- Juice of ½ lemon
Preparation
Mash avocado until smooth, mix in coconut cream and lemon juice and add seasoning to taste.

Happy holidays all! I thought this month that I would share some of the EASY recipes I like with you. These came from a great book called Eat Fat Lose Fat by Mary Enig. Again the emphasis is on simple this time! I have been on a salmon and coconut kick lately too, in case you don’t notice!
