Socca

Socca is a French and Italian delicacy made of chickpea or besan flour.
It’s incredibly simple to make, delicious and very versatile.

Traditionally, socca is served with grilled vegetables and cheeses as a kind of flatbread pizza, but you can use whatever you like. Because it’s so low carb, it would lend itself well to a higher fat menu – so toppings such as olives, rocket, spinach, roasted capsicums and preserved lemon would work nicely in a low carb diet.

Ingredients
1 cup besan / chickpea flour
1 cup lukewarm water
1 tablespoon of oil, extra for greasing
Pinch of salt, pepper to taste
3-4 sprigs of fresh rosemary
2-3 tablespoons crushed garlic

Method
Add the besan flour, water and salt/pepper to a large bowl and whisk well to combine.

Leave this mixture covered for 15-30 minutes whilst the ingredients settle. When rested, it should have a creamy consistency.

Preheat an oven to 200 degrees and place a well-oiled pan in the middle rack to heat up.
Once your mixture has settled, carefully remove the pre-heated pan and pour the socca mix into the centre. Return back to the oven for a further 15 minutes or until golden brown, before placing on the stovetop over a medium heat.

Flip as best you can, without letting it break so it can brown and crunchy.
Once golden, remove carefully and cut into 4 pieces. Serve immediately.
