“Cheesy” BBQ Scrambled Tofu

This one is KILLER. Tastes just like cheesy eggs 🙂

It is surprisingly protein and fibre dense, given the size!

It’s highly recommended for those vegans who find their protein and fat intakes are low, and who also need a boost of B vitamins from the nooch (nutritional yeast).

Works great as a brunch or breakfast, served alone or on sourdough toast for those with higher carb needs.

Ingredients:

1/3 block firm tofu, roughly chopped

3 tablespoons nutritional yeast

1 teaspoon coconut oil

1/2 cup almond milk

Pinch of smoked paprika

2 teaspoons fresh chives

1/2 tablespoon Worcestershire sauce

Salt & pepper to taste

Method:
Begin by heating up a heavy saucepan and add the coconut oil.

Once the coconut oil is hot, add the firm tofu and stir it around the pan whilst chopping the tofu pieces into smaller bits with the end of your spatula. Once lightly golden, add all of the remaining ingredients to the pan and continue stirring.

The scrambled tofu is ready when the sauce has condensed and thick.

Serve immediately.
