Caramel and Lucuma Protein Bars

Anyone who has ever said “the simple things in life are often the best” was obviously talking about these.

Easy to make, ready in a flash and very, very tasty.
Great for anyone on a low carb diet or even for those of us who find that pre-workout fats are better for longevity during a heavy session.
If that’s the case, I recommend you try pairing a bar of these with a strong shot of espresso roughly 30 minutes prior to working out.

Ingredients:

  • 20g (2 tablespoons) lucuma powder
  • 1 tablespoon melted coconut oil
  • ½ serve chocolate WPI
  • 1 tablespoon (20g) raw cacao powder
  • 1 serve caramel flavoured WPI

Directions:

Put the lucuma and WPI into a bowl and add a tiny bit of water, mixing well until the ingredients are combined and make a cookie dough texture. Portion out into six small pieces and roll into balls, making sure they are evenly sized.

To make the chocolate coating, simply melt the coconut oil and mix with the raw cacao and chocolate WPI.

In a rectangular Tupperware container, pour half the coconut oil chocolate mixture onto the base and ensure it is evenly coated. Place in the fridge for 5 minutes to set just a little, then take out and press each ball into the base, three in a row and pouring the remaining chocolate on top. Refrigerate again until set, which will only take between 5 and 10 minutes.
